Minnesota has been experiencing the chill of early autumn mornings. I decided to make my mother’s recipe for pumpkin pie squares. The pumpkin spice smells of fall are just one of the reasons it’s such a favorite time of the year. I share with you her recipe.
Pumpkin Pie Squares
Preheat oven to 350 degrees F.
1 cup all-purpose flour
1/2 cup instant oats
1/2 cup packed brown sugar
1/2 cup butter
Mix until crumbly, using an electric mixer on low speed. Press into ungreased 9 x 13 pan. Bake at 350 degrees for 15 minutes.
1 can (15 0z.) pumpkin
1 can (12 fl. oz) evaporated milk
2 large eggs
3/4 cup granulated sugar
1 teaspoon cinnamon, 1/2 teaspoon ginger, 1/4 teaspoon cloves
Beat well. Pour over baked crust. Bake an additional 20 minutes at 350 degrees.
1/2 cup pecans, chopped
1/4 cup packed brown sugar
2 Tablespoons butter
Sprinkle over pumpkin filling, return to the oven again and bake 15-20 minutes or until set (knife inserted in center comes out clean) Cool completely. Cut into bars. Top with whipped cream or ice cream.
Savor the smell and taste while you relax and watch the maple leaves fall from the trees.
